I wanted to create a cookie recipe that was healthy, but still filled with chocolate and satisfied my sweet tooth. I feel better when I don’t eat grains or refined sugar and these cookies pass the test. I also made them vegan so everyone can enjoy!
Ingredients
2 cups almond flour
1/4 cup cocoa powder
1/3 cup coconut oil (melted)
1/4 cup coconut sugar
1/2 cup water
1 teaspoon salt
½ teaspoon baking soda
1 cup dark chocolate chips or chunks
Flaky sea salt (optional)
Directions
Preheat oven to 350ºF and line baking sheet with parchment paper
Mix flour, sugar, baking soda, cocoa powder and salt in a bowl
Add in water and coconut oil to form dough
Add chocolate chips
Using a scoop or spoon make small balls and place on baking sheet, one inch apart
Bake for about 12-15 mins
Top with flaky sea salt while still warm
Let cool before enjoying!
